Rainforest Alliance is a non-profit organisation that works to conserve wildlands and promote the well-being of farmers and their communities. Among their strict requirements for coffee certification: organic farming, reduced water pollution, less soil erosion, pesticide prohibitions, farmer protections, and natural shade protection.
Shade grown coffee is cultivated under a canopy of trees. By preserving shade trees, farmers encourage biodiversity, especially among birds. Shade grown coffee is sometimes thought to taste better, since the beans take a longer time to ripen and develop more flavour when they're not in full sunlight.
Fairtrade is an international program which aims to make the global market more sustainable. Participating farmers must pay to be certified, in return, they receive a fair minimum price for any coffee they sell. To be certified, coffee farms must meet standards for fair labour, environmental sustainability, and community development.
Standards vary as coffee is typically certified as organic within the country of origin. The minimum standards include farming without pesticides or other chemicals for a minimum of three years in conjunction with a sustainable crop rotation plan that prevents soil erosion and depletion of nutrients, as well as the control of pests.
Co-operatives are smaller coffee farms working together under an ‘umbrella’ organisation responsible for processing, marketing, and commercialising coffee for its members. The sharing of resources enables them to sell their crops at a higher price, and share costs of moving from natually produced coffee to certified organic.
Utz Certified growers recieve a premium price for their coffee in return for meeting strict environmental, labour, and quality standards. Coffee must be shade grown,farms must practice water conservation, workers must have access to schools, healthcare, and housing, and farms must monitor their environmental impact.
The chemicals typically used to decaffeinate coffee are Methylene Chloride or Ethyl Acetate, both of which are carciagenic as well as harmful to the environment. Swiss Water is the only method which is 100% chemical free and removes 99.9% of the caffeine while protecting the unique origin characteristics and flavour of the coffee.
